Ingredients
  1. 1/2 cup KRAFT Zesty Lime Vinaigrette Dressing, divided
  2. 4 small boneless skinless chicken breasts (1 lb.)
  3. 1-1/2 cups fat-free reduced-sodium chicken broth
  4. 1 cup quinoa, uncooked
  5. 1 Tbsp. fresh lime juice
  6. 1 orange pepper, chopped
  7. 1 yellow pepper, chopped
  8. 1 green onion, sliced
  9. 1/4 cup chopped fresh cilantro
Instructions
  1. Pour 1/4 cup dressing over chicken in shallow dish; turn to evenly coat both sides of each breast. Refrigerate 1 hour to marinate. Meanwhile, bring broth to boil in medium saucepan on medium-high heat. Stir in quinoa. Return to boil; cover. Simmer on medium-low heat 10 to 15 min. or until quinoa is tender and liquid is absorbed. Cool.
  2. Heat grill to medium heat. Remove chicken from marinade; discard marinade. Grill chicken 6 to 8 min. on each side or until done (165ºF).
  3. Mix remaining dressing and lime juice until blended. Combine quinoa, peppers, onions and cilantro in large bowl. Add dressing mixture; mix lightly. Serve with chicken.
